CAO LAU

One of Hoi An specialty dishes is Cao Lau, which is a special dish of Hoi An that hardly can be replaced, it exists for hundreds of years with Hoi An people. Unlike Mi Quang, Banh Uot, Cao Lau is chewier, opaque yellow, usually served with broth from shrimp, meat and raw vegetables. To make Cao Lau delicious is an elaborate process from selecting materials as well as cooking. For the noodles to be golden and delicious, the chef had to take the cooked ash from Cu Lao Cham, a small island in Hoi An, soaked with fresh rice to produce crispy, chewy and dry noodles. Continue to use cotton cloth repeatedly to make supple, dry, rolled into medium pieces, cut into fibers, steam them several times and then dry them to make noodles. Through such many times, although leaving Cao Lau overnight, it isn’t rancid.

People often eat Cao Lau with bean sprouts parboiled in boiling water but not too soft. A few more raw vegetables, taken from the famous Tra Que vegetable village in Hoi An. The bean sprouts on top of the boiling water poured into the bowl, put the noodles on top, add some slices of meat and poured the fat cloves (crispy fried pig skin) and a spoonful of fried pork fat to be placed on the stove.

QUANG NODDLE

Quang Noodles as well as noodles and vermicelli are made from rice but have unique nuances and flavors. As the name suggests, this noodle originated from Quang Nam province. In order to make noodles, people use good rice soaked water until soft, grind into fine powdered liquid, not thick but not liquid, mix some alum to make the noodles brittle, hard and then make it into wheat leaves. Once cooked, place the them on the cooler, apply an oil layer to prevent the noodles from sticking and then cut it into fibers. The broth of local noodles is made of shrimp, pork, or chicken, sometimes made of snakehead fish, beef … very diverse.

WHITE ROSE HOI AN

White Rose, although only appearing briefly, is present in most restaurant menus in Hoi An,

White Rose is made with the main ingredient of rice starch, however, if you want to have a clear and delicious cake, the rice flour needs to be filtered many times. The better rice flour filtered, the more delicious and clear the cake will be.
